Flat iron steak with mushroom sauce
soft iron Place the steak in a plastic sealable bag and pour the dressingover it. Seal bag and marinate the steak at least 30 minutes -- thelonger the better. Preheat the grill to medium-high. Remove steak from the marinadeand place on the hot grates. Grill to medium rare. Remove from thegrill and tent it with foil and let sit 10 to 15 minutes. In a large skillet, melt the butter with the olive oil overmedium-high heat. Add the onions, mushrooms and Worcestershiresauce. Cook down onions and mushrooms until soft and cooked throughwell until almost all liquid is gone. Remove the mushrooms butleave pan juices. Keep the pan over the heat and add the wine to deglaze the pan,scraping up any browned bits on the bottom. Add the gravies to theskillet and mix well with the wine juices to soft boil and heatthrough. Add the mushrooms and onion to the sauce and top with somefreshly ground black pepper -- you should not need any salt. Slice the steak against the grain on an angle. Arrange steak sliceson a platter and pour mushroom sauce over. Cook's note: To make roasted white potatoes, drain 2 cans of white potatoes andplace them in a baking dish. In a glass, measure place the contentsof 1 package of onion soup mix and 1/3 cup olive oil. Stir untilmix dissolves. Pour over the potatoes and toss to coat. Bakeuncovered at 375 degrees for about 45 minutes to 1 hour untilgolden brown. Stir throughout to avoid sticking. Or pour potatoesin an aluminum foil packet and seal well -- and cook on 375 degreegrill -- over indirect heat for 45 minutes. To grill asparagus:Rinse fresh asparagus and trim the bottoms. Put in a plastic bagwith 5 or 6 finely chopped cloves of fresh garlic, kosher salt andfresh ground pepper and about 1/4 to 1/3 cup olive oil.
